Barajas Brands was founded in 1997 by Maestro Tequilero Gerardo Barajas, who combined his passion for tequila with his expertise as a chemical engineer. Under the mentorship of tequila expert Francisco Alcaraz, Gerardo honed his craft and developed the innovative “Desfibrador” extraction process, enhancing the flavor of 100% blue agave despite its lower yield. In 2016, his daughter Ruth Barajas expanded the family legacy by launching Savia Azul in Melbourne, Australia, which reflects the Barajas family’s dedication to Mexican artistry and tradition. Savia Azul embodies decades of expertise and innovation, showcasing a commitment to preserving tequila heritage on an international stage.
Savia Azul is a premium tequila that celebrates Mexican culture and craftsmanship through its handcrafted decanter made of Mayolica ceramics, a traditional art form with roots in Mexico’s colonial past. Originating from Spanish traditions and enriched by Arab techniques, Mayolica has developed a unique identity in Dolores Hidalgo, Guanajuato, known for its vibrant designs. Collaborating with the renowned Mayolica Mendez Torres artisan workshop, each decanter is a product of meticulous craftsmanship, reflecting respect for the agave plant.

At Savia Azul, we craft our tequila from the rich, volcanic soils of Jalisco’s lowlands, where blue agave is nurtured for five years before being hand-harvested by skilled jimadores. The piñas are slow-baked to enhance their natural sweetness, and our Maestro Tequilero, Gerardo Barajas, employs the innovative “Desfibrador” technique to extract additional flavors.
The agave juices are naturally fermented and distilled twice for purity. After distillation, the tequila is aged for at least 12 months in American oak barrels, adding notes of caramel, vanilla, and toasted oak.
